Before you smash your pumpkin this fall, collect the pumpkin seeds and increase your fiber intake. This is the recipe I used this year to season my pumpkin seeds:
2-1/4 teaspoons margarine
1/4 teaspoon garlic salt
1 teaspoon worcestershire sauce
1 cup pumpkin seeds
1/4 teaspoon garlic salt

Directions:
Bake in a shallow dish (I used a cookie sheet) at 275 degrees for about 40 minutes. If desired, sprinkle a little Parmesan cheese during the last 10 minutes of cooking (adds a little dairy and fat).

We have one pumpkin in our appartment and all we've wanted to do is cook the seeds but we have had NO time! When we do I'll definitely try your recipe. Seeds are a great snack on the go!
ReplyDeletei love the holloween season and pumpkin seeds are my favorite healthy snack. plus you can ugar and cinamon to make them taste better. grea idea for a healthy snack.
ReplyDeleteI absolutely love cooking pumpkin seeds and putting salt on them. I remember doing this from when I was little with my family and still to this day go home to get the seeds my mom has cooked. I know it sounds weird though because many think when you open a pumpkin it smells disgusting so how could these seeds be even edible, but in reality they are really good.
